I've run across some interesting information lately about coconut and palm oils. It appears that everything we've been told about what fats are "unhealthy" is just a smoke screen for import and trade issues. I've been doing some reading and am convinced that eating coconut oil is not only not bad, but actually good! There is a lot of evidence that it is better for you than the highly processed canola oils and other "good" oils. Did you know that the fats it contains are mainly MCTs (medium chain triglycerides), half of which are lauric acid, which increases metabolism and are more easily digested than other fats? They also don't lead to belly fat like long chain triglycerides. The only other rich source of lauric acid is breast milk, which is why coconut oil is often part of commercial formulas. I recently ordered some coconut oil and am going to try replacing other oils as often as I can. I'll let you know how it goes! It's very good for hair and skin, so I'll be trying that too. I am going to smell so good!
